ThestrascinatiI am a typical recipe of Puglia, very similar to orecchiette, but they differ in shape. These in fact are much larger and open. It is a typical pasta also of Basilicata.

The name comes from the way in which the dough is prepared, this model comes in fact 'dragging' on a large wooden floor with the fingers of the hand. They say that the secret is in the processing to three fingers and allows to obtain a smooth high (the one in contact with the wooden board) and an irregular (the one in contact with the fingers) that leaves the wrinkled and uneven surface which will collect the sauce better .

An idea for a quick and sure taste preparation: Cook strascinati in salted water. Meanwhile fry an onion in olive oil, a pinch of red pepper and add the fresh tomatoes orpeeled choppedand cook for 20 minutes. Drain the pasta and dress with the sauce. Add a generous grated hard cheese from Puglia and an extra virgin olive oil.
