The Tarantello It is obtained from the lower abdomen tuna, selecting intermediate slices among the most fat and leaner ones.
The name comes from Taranto, who was very ancient homeland of traps: the name "tarantello" appears for the first time in the list of a dinner given by Cardinal Campsites Emperor Charles V of Spain in sec. XVI precisely in Taranto, where its processing technique transmigrated into traps of Sicily and Sardinia (then belonging to the Spanish crown) and in particular in the area of ​​Carloforte and Portoscuso, the only one where it is kept up to date.
It differs from the belly, because it largely retains the taste, without being oily consistency; It differs from tuna as such because it is softer.

Tuna is used to massacre caught in tuna Carloforte traditionally selected individually, cut by knife and boxed by hand in the establishment of the ancient traps.
