First of all, the same buzzonaglia is a preserve that not everyone offers in their assortment because it requires artisanal care as it is obtained with the meat that remains attached to the backbone of the tuna; but above all the Testa family takes care of all the phases of the bluefin tuna processing, from fishing to hand cutting up to its potting. This attention to quality has convinced Ciccio Sultano, starred chef of the Duomo restaurant in Ragusa, to marry this project of excellent fish preserves by becoming a first-person collaborator of the Testa family.
The bred tuna uzzonaglia is very versatile thanks to its characteristic flavor and can be used in any dish, from the appetizer to the second: tasty, compact and digestible, the meat of the buzzonaglia allows us to have an excellent ingredient for light but tasty dishes, both in salads and in sauce.
Butin addition to quality tuna in this jar you will find an excellent oil, a superior category extra virgin olive oil: therefore do not throw away the canned oil but use it both as a main condiment or as an ingredient for gourmet emulsions (it is the perfect oil for your mayonnaise).
