Black chickpeas are traditional from southern Italy, where they have always been used for rustic soups, rich soups and tasty velvety. The creamy consistency has made black chickpeas an ingredient highly appreciated by many chefs for its versatility because, both cooked and overcooked, it still has a precise texture identity with which it signs the recipe, strongly influencing all the other elements.
The flavor is so characteristic as to make this legume excellent to be enjoyed even in purity, seasoned with only EVO oil: black chickpea has a natural flavor, which many times it is almost not even necessary to salt the dish. The aromas and the unique aromatic profile marry beautifully with the refinement of the fish, a combination absolutely worth trying at least once.
Here you can find these dried black chickpeas and therefore you will need to soak them before being cooked: we recommend at least 24 hours (but being so particular and completely natural even a few more hours does not hurt).
