The Ciauscolo It is ideal for snacks and appetizers, spread on bread, croutons and freshly roasted bruschetta.

The main characteristic that distinguishes the Ciauscolo from other sausages is its spreadability.
This requirement is obtained from the composition of the mixture and the specific processing methods handed down by the rural tradition.
The different cuts of pork meat constituting the dough, such as shoulder pulp, finishing of ham, loin and bacon, are preliminarily selected and washed and then added to aromas and spices: salt, ground black pepper, wine and crushed garlic.
Only natural casings are used for packaging. The maturing process takes place in a natural environment, and thanks to the cool temperate climate characteristic of the Sibillini Mountains we obtain an unforgettable salami.
When cut, Ciauscolo is white-pink, uniform and homogeneous, with an intense, aromatic, decisive and characteristic aroma and a savory and delicate taste.

The etymology of the term comes from some of the Latin "cibusculum", that is small food, since this tasty salami is often spread on small slices of bread for snacks. For others it comes from the dialect word ciausculu, which indicates the kind of casing used for sausages in the Macerata area.
 
The King Norcino di Vitale is a historic Marches workshop that since 1957 keeps alive the ancient art of pork-butchery, that is the processing of cured meats. This artisan reality follows every stage of production, providing even to grow cereals that will become the main food for pigs. The cured meat laboratory is located in the Sibillini Mountains National Park, ensuring naturalness to the cured meats that mature there.
