The aromas and flavors of the meats signed Giacobbe are those of tradition: simple and decisive tastes. The pig lard undergoes a salting process for at least twenty days, then is cut into cubes, then ground with an ad hoc drill and finally, when the consistency is that of a cream, the pate is salted and flavored with local herbs.
