TheLivarot petit DOPIt bears the name of the capital in which was the best selling cheese and circumscribe the production area: the surroundings and the village of Livarot.

Its main feature that makes it recognizable are the five bands of sedge (the vegetation that grows in abundance in the marshes and ponds of the region) that surround it, which enable it to retain its shape during curing. A good Livarot has the flat and parallel surfaces and, under a smooth, shiny crust of a red to dark brown, its dough is smooth and elastic end. Its color is yellow gold with no trace of white. When ripe, its pasta weighs on the tongue and melts in the mouth releasing its spicy flavor.

In the kitchen:Livarot is primarily a cutting board cheese that is eaten after a meal. It fits perfectly with highly tannic or full-bodied wines or as tradition dictates "Norman" with a bowl of cider.
