The Ravioli Dolci, in dialect also called "patissotti buon boccone", are typical sweets of the carnival period, which were in the past produced in homemade confectionery. In Romanengo are made by stuffing with apricot jam a sheet of almond paste in the form of ravioli. Then, on the ravioli are spread black cherry jam and sugar grains, as a reference to the sprinkled cheese on the ravioli sauce.

The Confetti were created in the Romanengo house: a small ball of almond paste "fondant" oval shape is frozen in dark chocolate bitter. The almond paste is also scented with rum, maraschino, vanilla and coffee, giving rise to colorful treats, like a rainbow.Confetti and ravioli together make every celebration joyful and colorful!

Pietro Romanengo Fu Stefano is a "confectionery" in the eighteenth-century meaning of the term: a company consisting of an artisan workshop, where you work with recipes of ancient tradition fruit, flowers, cocoa, sugar, the spices, and from two prestigious Genoese shops. The orange blossom water is distilled from an ancient distillery in western Liguria, the almond paste produced directly in Romanengo, as well as candied and caramelized fruit; the craftsmanship and the high quality of the raw materials are the hallmark of the company.
