Fracassi butcher, a bit of history:

A careful selection of raw materials, from Chianina meat certified and processed with the right aging times, to Cinta Senese cured meats bred in the wild, not least the Casentino Gray. The result is the result of years of experimentation, from balancing the free life of the pigs compared to those indoors, so as not to harden the meat too much, to perfecting the salting of the meat over the years ".
