With the Taggiasca olives pitted in oil you will have a special ingredient, one of the best table olives in the world, excellent both to serve alone as an appetizer and to create lively but refined recipes. Taggiasca pitted olives have a fruity flavor and are characterized by a delicate aroma : its organoleptic qualities make it a unique excellence in the world, being a perfect olive not only for the table but also for the production of oil (Taggiasca olive oil is not very acid and very fragrant).
The already pitted olive will give you the opportunity to have an ingredient ready and simple to use, which you can use both to give taste during the preparation of the recipe but also in the phase of closing the dish. We recommend however to insert them at the end of cooking to preserve the juicy pulp.
Taggiasca olives are the most typical of the Ligurian black olives and originate from the hamlet of Taggia in the province of Imperia. In our local recipes are mainly used in stewed preparations meat based (with rabbit) or fish. The organoleptic qualities make it a versatile ingredient that is well suited to any kitchen, even with international influences.
