Rossese di Dolceacqua DOC comes from the indigenous grape variety, which has spread to western Liguria and its hinterland since the 15th century. It is a Ligurian red wine that best accompanies all the most important dishes of the local gastronomic tradition of Liguria: from stuffed pasta such as ravioli seasoned with Genoese-style meat tuccu or mushroom sauce up to Ligurian-style rabbit, a typical second dish that involves cooking the rabbit with pine nuts and Taggiasca olives; also excellent with kid and lamb. As for cheeses, Rossese di Dolceacqua goes well with non-spicy cheeses. A savory red wine with which you can also experiment with the combination with fish, especially the blue one. Well present and well balanced tannins. The bitter background note is very pleasant, acidity is good. On the nose there are floral aromas of rose and fruity aromas of red fruits, the Ligurian characterization is present with hints of Mediterranean herbs.
