Rossese di Dolceacqua DOC 2021, l. 0,75 - Terre Bianche
A breath of sea air, enriched with aromas of dried rose, small red fruits and Mediterranean spices; and then elegant and well-arranged tannins in an apparently simple but effective texture: this is the Rossese di Dolceacqua. From fish to lamb, from vegetable pies to goat stew with Pigna beans.
The name derives not from the ruby red color but rather from the French word 'roché' to indicate the rocky soil on which it is grown. Savory, fresh and elegant.
Wide but composed and personal bouquet, hints of small red berries, cherry, dog rose and spices.

Rossese di Dolceacqua DOC 2021 is a Ligurian red wine, one of the most characteristic and appreciated. Savory and fresh, Rossese di Dolceacqua is an excellent red wine also with fish, for example with the typical Ligurian stockfish (but you can even experiment with sushi, blue fish sashimi); definitely recommended to accompany white meat dishes, rabbit and lamb. Here we usually bring it to the table together with traditional Genoese savory pies (pasqualina, rice cake, etc ...)
The company was born in 1870 when Tommaso Rondelli decided to plant the first vineyards of Rossese di Dolceacqua, a D.o.c. exclusive of the Val Nervia area, in a region of white and clayey earth, called Terre Bianche. The brothers Claudio and Paolo Rondelli, and Franco Laconi are protagonists of the company expansion in the years 1980 - 1998 which allowed not only a further and substantial production increase, both quantitative and qualitative, but also the ideal completion of the agricultural activity with the agritourism. Since the late nineties, Filippo has replaced his father Claudio alongside Paolo and Franco in running the company. Since then, the quality of the wines has further increased, which have come to obtain the most important awards, and of the experience offered to guests in the farmhouse.

Meatloaf of potatoes and green beans, 500 gr
Baciocca cake (potatoes, onion, lard), 750 gr
Like all traditional dishes, even for Baciocca, there is no ingredient that does not have its own reason. There are several variants, but they all have some local ingredients in common, such as the inevitable mountain potatoes. Another undisputed star are onions, accompanied by lard and ricotta. The traditionally used cooking method deserves special mention, Baciocca, in fact, was cooked inside a cast iron or terracotta bell that acts as a cover for the "testu", the text, a plate also made of cast iron. Our Baciocca is not an industrial product produced in series, so every time it will always be good but a little different as it should be for a handmade savory pie.
Rice cake, 310 gr
Like the other "gattafure" or traditional stuffed cakes, sold in the Genoese "sciamadde", there are also different variations for the Rice Cake according to the production area, where the main ingredient is rice, traditionally boiled in milk.
Onion and cheese savoury cake, 310 gr
Shipping days: Monday, Tuesday, WednesdayManagement times: 48 Hours
Stuffed Vegetables, 310 gr
The standard composition of these stuffed vegetables is three onions, three peppers and two courgettes, but it can vary according to availability.
Simple and genuine ingredients, fruit of the earth, skilfully combined with wild herbs, eggs and fresh cheeses. A simple and tasty cuisine, which once again, after the traditional gattaffure, plans to enrich the raw materials available, filling them with the leftovers available, in an anti-waste perspective.

The common characteristics of the wines obtained from the Alicante grape are a ruby red color and pleasant fruity aromas.
