The Macajolo red wine is obtained from the Ormeasco blend (Dolcetto sul mare, on this side of the Apennines) and the Sinceaur grape (an ancient blend that has almost disappeared today, which was widespread in the Imperia area long ago).

It is a red wine that goes well with local stuffed pasta topped with meat sauces. As for the pairing with cheeses, the choice of aged cheeses is recommended.

Macajolo evolves very well during the years of aging revealing aromas of red fruits with spicy notes typical of the grape varieties, hints that we also find on the palate accompanied by a pleasant light flavor and a good balance of tannins.

Macajolo is an elegant, fine and subtle red wine. Slightly spicy and savory, you can smell the scent of red fruits and the other characteristic aromas of the fresh berries of these grapes that the maceration for three weeks at a controlled temperature in contact with the skin has brought to the surface.
