Carnaroli rice is a native of Pavia, Novara and Vercelli. It 'a medium-grain rice with pearling extensive, rich in amylose.

Watercolor beans perfectly intact, firm, shelled and tasty then do not stick, better absorb the seasonings, do not lose the starch, protein, vitamins.

The great quality is due to the aging of the raw rice kept in silos to cool as long as possible because the starch, in the presence of oxygen, in time perfections its features.
The refining of rice takes place with the propeller, a slow process invented in 1875 and now used only by Rondolino, which is still considered the best because it leaves the beans perfectly intact.

Tenuta Colombara was built in 1500 in Livorno Ferraris, in the province of Vercelli, the European capital of rice. Acquired in 1934 by Cesare Rondolino has always been devoted to rice cultivation, which since 1998 has become a single variety, the Carnaroli.
Then converted the entire Company to organic farming in 2004, the Tenuta Colombara also becomes didactic home of the University of Gastronomic Sciences. In the Tenuta Colombara it is also an interesting eco-museum of paddy.
