The Podere Cadassa Cupis a cured meat still created by hand using only natural raw material, that is pork and pork intestine, salt and pepper. The Coppa di Podere Cadassa is longer than the Italian commune following the local tradition of the area which prefers a cut of meat called "seven ribs". The coppa is the salami obtained from the upper part of the pork neck.
The Cadassa farmIt has belonged to the Bergonzi family since 1780, the year of birth of the historic Trattoria Al Vedel, where for five generations the family has been selecting and producing cured meats, starting from processing up to maturing in the special natural salami cellar.
