The name comes from the aesthetic characteristics: rounded shape, spongy appearance, as if it were pitted and irregular.

A wrap made of crispy dough without yeast; Spongata is in fact a simple dessert, as often happens for Ligurian culinary products: baked, Spongata is characterized by the filling of jam, often enriched with dried fruit (pine nuts and nuts in general) or honey and aromatic herbs. There are many recipes to make the Spongata, but all are based on ingredients that relate to ancient symbols linked to protection rites.

Pine nuts, associated with pine, evoke immortality; raisins, symbol of joy and synthesis of vital explosion; almonds refer to a concept of life often represented by iconography of light that surrounds the Madonna; the walnut, associated for its shape to the brain of the man, brings back to a symbolism of fertility (in fact the nuts were offered to the spouses as a good omen); the citrus fruits finally evoke prosperity.

The pasqualina cake is a savory vegetable pie with two layers of overlapping dough, the filling of which changes according to the season and the availability of vegetables at that time. Artichokes are therefore the filling of the spring version of the Easter cake since they grow in the months between March and June, while at Christmas it is more common to serve the cake with a beet filling; the other ingredients are the cheese (both seasoned with hard texture to give flavor and the fresh one to give an acidic touch to the filling) and the inevitable eggs.
