Freshly boiled and dipped in Taggiasca extra virgin olive oil, it offers inimitable scents and flavors, but also goes perfectly with very delicate foods such as boiled fish, steamed, baked, white meat or refined sauces.

The purple asparagus is a valuable variety of asparagus whose intense color does not depend on the cultivation technique, but is linked to its genetic heritage. Its purity is preserved by the number of its chromosomes so that it cannot cross with other varieties.
The sandy and loamy soils of the Albenga Plain with its microclimate are the perfect habitat for purple asparagus. The cultivation of violet is completely manual and the harvest takes place from mid-March to mid-June.
The best way to enhance the flavor and delicacy is to cook it in the simplest way possible, without ingredients that cover it completely. Perfect to accompany very delicate foods such as boiled fish, steamed, baked or white meat.
