This red wine vinegar from Acetaia San Giacomo is a vinegar still made as it used to be, from a spontaneous and very slow oxidation, which allows the aromas and fragrances of the original wine to be kept intact. It expresses the soul of the area in purity: this vinegar is made from local organic grapes and is aged over time in oak barrels to broaden its character and natural aromas.
We recommend it both for daily use (for example for salads and emulsions) and to make your dish more refined.

How to dress the salad
It may seem like a stupid question, but in reality to get a really tasty salad you have to take into account several variables for our dressing. The most "normal" one is definitely oil, vinegar and salt: in this case it is not recommended to pour the ingredients in random order; from a chemical point of view, the first ingredient to use is salt, then vinegar (which as an acid manages to dissolve the salt) and only oil at the end; if instead you put the oil in the salad first, you will only create a patina that will prevent the salt from melting and will not mix with the vinegar, making the overall seasoning unbalanced.
